Ingredients:
200g Ramen noodles
200 gms Britannia The Laughing Cow Cheese Cubes
1 Onion, thinly sliced
2 cloves Garlic, minced
1 Julienned carrot
100g Mushrooms,
sliced4 cupsVegetable broth
2 tbsp Olive oil
PinchPepper to taste
1 spoon Spring onions for garnish, chopped
Method:
Prepare the ramen noodles according to package directions. Drain and set aside.
Heat the olive oil in a large pan over medium heat. Add the chopped onion and crushed garlic and cook until soft and fragrant in 3-4 minutes.
Add the carrots, chopped peppers and chopped mushrooms to the pan. Cook for another 5 minutes until the vegetables are soft.
Pour over the vegetable soup and bring to a boil. Once boiling, add the British Laughing Cow cheese cubes and stir until it dissolves in the stock and forms a creamy base.
Season the cheese sauce with salt and pepper. Season if necessary.
Divide the cooked ramen between the bowls. Pour the cheesy vegetable soup over the noodles, making sure that each bowl contains enough vegetables and broth.
Garnish with chopped green onions, serve hot and enjoy homemade cheese vegetable ramen.
