Sweet corn curry in Indian style is a simple gravy/curry prepared with sweet corn kernels. This easy to prepare dish that tastes delicious and can be served with both rotis and rice.
Ingredients required for Sweet corn curry in Indian style
Onion paste: 3/4 cup
Tomato Paste: 3/4 cup
Sweet corn kernels: 1 cup, boiled
Ginger-garlic-green chilli paste -1 tsp
Salt
Coriander leaves
Spice powder (made of ¼ cup turmeric powder, ¾ cup chilli powder, 1tsp coriander powder, ½ tsp garam masala)
For seasoning
Oil: 2 1/2 tbsp
Cumin seeds/jeera: 1 tsp
Bay Leaf: 1
Method of preparation for Sweet corn curry in Indian style
Heat oil in a pan, add bay leaf and cumin seeds.
Add onion paste, saute on medium flame.
Stir continuously, add salt, add the ginger-garlic-green chilli paste, cook for few minutes.
Add the tomato puree, chilli powder, turmeric powder, coriander powder and salt. Cook for 5 minutes.
Add and mix sweet corn kernels.
Add cup of water, garam masala, cook till you get gravy consistency.
Garnish with coriander.
