Mushroom Pulao is a flavorful Indian rice dish. This pulao is a spicy twist to simple pulao. This dish has a nice aroma, wonderful flavors of spices, and also has the goodness of mushroom. This dish can be prepared with very few ingredients within few minutes. This is prefect on a busy day and can also be packed in your kid’s lunch box.

Ingredients
- 1 cup sliced mushrooms (khumbh)
- 1 cup long grained rice (basmati) , soaked for 10 minutes and drained
- 2tbsp oil
- 2 cloves (laung / lavang)
- 12 mm ( 1/2") piece of cinnamon (dalchini)
- 2 cardamoms
- 1 bay leaf (tejpatta)
- 1/2 cup finely chopped spring onion (whites and greens)
- 1 tsp garam masala
- 1 tsp cumin seeds (jeera) powder
- 1/2 tsp chili powder
- salt to taste
Directions
- In a microwave safe bowl, add oil, cloves, cinnamon, cardamom, bay leaf and spring onions, mix it well and microwave on high flame for 1 minute.
- Add the mushrooms, mix it well and microwave on high power for 1 minute.
- Add the rice, mix it well and microwave on high power for 1 minute.
- Add 2 cups of hot water, garam masala, chili powder, cumin seeds powder and salt, mix well and microwave on high power for 12 minutes, stir once after every 4 minutes.
- Once done, serve it with any raita of your choice.
