Ingredients required for chicken soup with ginger and vegetables:
Canned low-salt chicken broth: 6 cups
Potato, peeled and cut: 1 large
Red-skinned sweet potato (yam), peeled and cut: 1 large
Onion, chopped coarsely: 1 large
Carrots, peeled, cubed: 2 large
Broccoli florets: 2 cups
Celery stalk with leaves, chopped: 1 large
Peeled fresh ginger, chopped: 1 tablespoon
Frozen corn kernels: 1 cup
Diced cooked chicken: 2 cups
Fresh parsley, chopped: 1/3 cup
Preparation of chicken soup with ginger and vegetables:
1. Heat chicken broth in simmer or place in oven over high heat.
2. Add yam, onion, potato, broccoli, carrots, celery and ginger.
3. Bring it to boil.
4. Reduce to medium heat and cook for approximately 30 minutes till all vegetables become tender.
5. Use a blender to Purée soup in batches to get chunky texture.
