Brown rice is a highly nutritious grain. It is good for the heart, diabetes, high cholesterol, aids digestion and may reduce the risk of cancer.
Brown Rice Pulao is a healthy and delicious pulao with brown rice and vegetables. The recipe is ideal for lunch or dinner.
Ingredients:
Brown Rice: 1 cup (soaked in water for 15 to 20 minutes)
Onion: 1 medium (sliced)
Carrot: 1 (chopped)
Beans: 5 to 6 (chopped)
Capsicum: 1, small (chopped)
Broccoli: 1/2 cup (chopped)
Green Peas: 1/4 cup (shelled)
Green Chillies: 2 (slit)
Cinnamon: 1/4 inch piece
Green Cardamoms: 2
Cloves: 2
Coriander Leaves: handful (chopped)
Cumin Seeds: 1/4 teaspoon
Garlic: 1/2 teaspoon (minced)
Salt as per taste
Oil as required
How to make Brown Rice Pulao:
Take a heavy-bottomed pan and heat 1 teaspoon oil.
Now, add cumin seeds, cinnamon, cloves and cardamoms.
Saute well for 45 seconds.
Then add garlic and onions.
Fry it until onions turn brown.
Now add the rice, green chillies, vegetables, salt and mix it well.
Pour 3 to 4 cups of water.
Now, simmer over low flame until most of the water has evaporated and rice is cooked and vegetables are tender.
Remove and transfer to a serving bowl.
Garnish with coriander leaves and serve hot.
