Sweet ripe mango chutney is a South Indian chutney made from sweet and ripe mangoes along with coconut. It is a best combination with dal-rice.
Ingredients
Ripe alphonso mangoes(diced): 2 or small sweet ripe mangoes: 4
Grated fresh coconut or dessicated coconut: 1 cup
Red kashmiri chillies: 2-3
Small flakes garlic: 2
Tamarind/imli:½ inch piece
Salt
A little jaggery to taste
Preparation method
Grind the coconut, garlic, jaggery, red chilies, salt and tamarind into a fine paste using water.
Transfer the paste into a bowl, adjust seasoning.
Alphonso mangoes should be chopped finely before mixing to the paste.
Mangoes can be simply peeled and mixed, if small mango varieties are used.
Keeping the flesh intact, the peeled mangoes are to be added with the seeds to the chutney.
Mix thoroughly and serve the mango chutney with dal rice or idli, dosa or even parathas.
