Nutritionist Kavita Devgan has shared some easy and delicious salad recipes to The Quint, the leading daily, which we thought will be useful for those who are working from home.
Salads are a perfect blend of all things good. They do not just give a colorful look and appetizing taste but also are rich in nutritional contents. If you are someone who thinks a salad is nothing but the slices of tomatoes,onions and cucumbers with lemon juice then you need an upgrade.
There are many combinational salads that have come up recently which are rich in vitamins, minerals and contain loads of anti oxidants plus they are the easiest dishes to put together when hungry.
Now that everyone’s working home and also not able to hit the gym, these salads will be your best friends as they can satisfy your taste buds and also will keep your calories in check.

Warm Bread and Veggies Salad

Cut a slice of fresh bread into pieces and transfer them into a salad bowl. Add one sliced red tomato to it. Season it with 1 table spoon lime juice, salt and pepper. Keep the bowl aside for 5 minutes.
Take a pan, add oil, let it get heated and then add sliced garlic, sliced carrot and french beans and saute them till they become slightly tendered.
Add some mushrooms and red pepper and let it cook for 2 more minutes. Sprinkle some salt and pepper and transfer them into the salad bowl. You’re ready to eat.
Potato and Apple Salad

First step is to prepare the dressing. For this, mix together one tsp each of olive oil and sesame oil along with vinegar and sugar. Add 2tsp of Worcestershire sauce and ½ tsp of Tabasco sauce and sprinkle some salt and pepper with some mixed herbs to taste.
Mix together some shredded carrots, chopped pineapple, sliced red pepper and some chopped apples. Finally add some boiled potatoes in cubed form. Fold in the dressing and dig in!
Chickpea Cucumber Salad

Take a bowl and add 1 tbsp of olive oil and lemon juice and whisk. Add some crushed red pepper, a little chopped garlic and some oregano. Boil the chickpeas and then transfer them into this bowl. Chop some fresh cucumbers and add them too. You can also add chopped tomatoes if you like. Keep the bowl in your fridge for 30 minutes and the salad will be ready.
Sprouts and Potato Salad

Mix your favourite sprouts, boil the potatoes and chop them into small pieces and add them to the sprouts and transfer the contents in a bowl. Add sliced carrot, onion, and green chilli to it. For taste add yoghurt, and roasted cumin powder. Place on a bed of lettuce. Chill and have this tasty salad while you work.
Green Papaya Salad

Firstly make a dressing of olive oil, lime juice, honey, chilli flakes, and keep it aside.
Peel a green papaya, scoop out the seeds and using a potato peeler make thin strips of the papaya.
Take a large bowl, add chopped spring onions, some basil leaves, coriander leaves and then pour the dressing into the bowl. Finally add some peanuts and also some sprouts and toss all the ingredients. Chill and have it.
