Ingredients required for black bean vegetable soup
Vegetable soup: 1 table spoon
Chopped onion: 1 cup
Clove garlic: 1 table spoon
Chopped carrots: 1 cup
Chilli powder: 2 teaspoons
Ground cumin: 1 teaspoon
Vegetable stock: 4 cups
Black beans, rinsed and drained: 15 ounces
Whole kernel corn: 8.75 ounces
Black Pepper: ¼ teaspoon
Stewed tomatoes: 14.5 ounces
Method of preparation of black bean vegetable soup
1. Heat oil on medium heat in saucepan.
2. Cook garlic, onion, ginger and carrots.
3. Keep stirring occasionally until veges turn transparent.
4. Add chili powder and cumin; cook, stir.
5. Add stock, half beans, corn, and pepper;
6. Bring to boil.
7. Meanwhile, puree tomatoes and remaining beans together in blender or food processor.
8. Add to sauce pan, heat and simmer for 15 minutes till carrots turn tender.
