Ingredients required for Broccoli Soup
Coconut or extra-virgin olive oil: 1 tbsp (little more for drizzling)
Garlic, minced: 2 cloves
Red pepper flakes: 1/4 tsp
Yellow onion, diced: 1 medium
Cleansing broth: 4 cups
Baby spinach: 3 cups
Avocado: 1 chopped, plus more for garnish
Broccoli, trimmed and chopped (6 cups): 1 head
Coarse salt
Freshly ground black pepper
How to prepare Broccoli Soup
•Take a medium pot, place it on medium heat, and pour oil and heat.
•Add onion, garlic, and pepper flakes and cook.
•Stir until tender for 6 to 8 minutes.
•Add broth and let it boil.
•Add broccoli, cover the pot and cook.
•Cook till the broccoli turn bright green and tender (for nearly 2 minutes).
•Add salt and pepper.
•Take it out of heat.
•Stir in Spinach.
•Cool it slightly.
•Transfer soup to blend
•Pureethe soup with avocado.
•Adjust seasoning. (salt and pepper)
•Garnish with avocado and a drizzle of olive oil.
