1/2 cup Parmesan Cheese (grated)
4 tablespoons unsalted Butter (room temperature)
3 tablespoons Mayonnaise
2 tablespoons Lemon Juice
1/4 teaspoon Dried Basil
1/8 teaspoon Garlic Powder
5 (about 3 tablespoons)Buttery Crackers, crushed
4 6-ounce Tilapia Fillets
2 tablespoons Olive Oil
Salt and Pepper
Instructions:
Preheat broiler on a rack to high. Line a rimmed baking sheet with foil and brush with cooking spray.
In a small bowl, mix Parmesan cheese, butter, mayonnaise, lemon juice, basil, ¼ tsp. pepper, garlic powder and crushed crackers. Refrigerate the topping mix in freezer.
Now prepare the fish. Arrange fillets in a single layer on top of the baking sheet. Pour some olive oil and season with salt and pepper. Broil until fish is opaque, 7 to 8 minutes.
Remove from oven and top with cracker mixture evenly over filets. Broil until topping is golden brown and edges of fillets are crispy, about 2 minutes.
Serve hot.
